I started my career in food science, studying how ingredients behave, break down, and transform. But the deeper I went in my PhD, the more I realized something important: I really wasn’t in love with food science and the part of science I loved most wasn’t tied to food at all. It was tied to materials.
How they behave. How they hold water. How they interact with the human body. And that curiosity led jellyfish collagen from foods to cosmetics.
At first, the goal was simple: explore new uses for an abundant Georgia jellyfish with virtually no demand. But convincing people to eat jellyfish? Let’s just say the enthusiasm wasn’t exactly overwhelming. So we tried something different.
We took the same science. Collagen breakdown. Rheology, Hydration behavior and applied it to skincare instead of food. And suddenly, everything clicked.
The same properties that made jellyfish fascinating in the lab made them extraordinary for cosmetics: their ability to hold water capacity, their unique collagen structure, their natural compatibility with skin.
And unlike the food experiments… no one turned down jellyfish skincare.
That’s how JellyCoUSA was born. Not from a business plan, but from a scientific pivot that revealed a better path forward.
A path where Georgia jellyfish could create value, support coastal communities, and spark a completely new category in skincare.
Learning point: Your first idea or your second or your third… or even your twentieth may not be your best but keep working and do not give up. What I have realized throughout this journey is when we put our trust in God and His Son Jesus Christ first and foremost then everything will click according to His timing and plan, not our own.
